What Temperature Should Wine Be Stored At?

One number, one rule, and the four things that actually ruin a bottle at home.

Around 12–13°C (54–55°F), and keep it steady. That is the whole answer, and it is the same answer for red, white, rosé and sparkling.

You will find charts online giving a different storage temperature for every colour — reds warmer, whites cooler, sparkling cooler still. Those are serving temperatures wearing a disguise. For storing bottles, one stable cellar temperature suits everything, and how steady you keep it matters considerably more than which number inside the range you land on.

Storage and serving are two different questions

This is the confusion worth clearing up first, because it sends people out to buy equipment they may not need.

Serving temperature is what you want in the glass, for the twenty minutes you are drinking it. It genuinely does differ by style — sparkling cold, whites cool, reds barely below room temperature. Our serving temperature chart covers that properly.

Storage temperature is where the bottle lives for months or years before that. Here the goal is not to flatter the wine, it is to slow it down and leave it alone. Cool and constant does that for every style in the house. A dual-zone wine fridge set to two different temperatures is storing your whites at their serving temperature — convenient if you drink them straight from it, but not a requirement of storage.

Why stability beats the exact number

If you stored a case at a rock-steady 15°C and another at a wobbling 10–16°C, the steady one would almost certainly show better in five years, even though its average is higher.

The reason is physical. As temperature rises and falls, the wine and the small pocket of air in the neck expand and contract. That movement works against the cork, and over many cycles it lets minute amounts of oxygen in. Each exchange is trivial; hundreds of them flatten the aromatics and dull the fruit. A bottle can be spoiled by a hundred small changes rather than one dramatic one.

Warmth on its own also speeds everything up: ageing reactions run roughly two to three times faster at warm room temperature than at cellar temperature. That is not always ruin — it is just a wine arriving at maturity early, and often clumsily, having skipped the slow development that makes age worth waiting for.

What actually goes wrong, and when

Two heat clues you can read on a bottle before opening it: a cork sitting slightly proud of the rim, and sticky residue under the capsule. Both suggest the wine got hot at some point. Light, humidity and which way up

Light is the underrated one. UV reacts with riboflavin naturally present in wine and photo-oxidises methionine, producing sulphur compounds that smell of wet wool or cooked cabbage. The fault has a name — lightstrike — and it is why bottle colour is not decoration: amber glass blocks the most UV, green glass rather less, and clear glass very little. Sparkling wine and pale rosé in clear bottles are the most exposed, which is worth remembering when a shop displays them in a sunny window. Keep bottles in the dark and this problem disappears entirely.

Humidity around 50–70% keeps a natural cork supple. Very dry air can shrink the cork and let air in; very damp air grows mould on labels and cartons. In practice, most indoor cupboards in a temperate climate sit in a workable range, and this only becomes worth managing for wine you are keeping many years.

On their side — for cork-sealed bottles, so the wine keeps the cork moist and swollen. If the closure is a screwcap, orientation genuinely does not matter, so store those however they fit.

Vibration gets repeated constantly in storage advice. The evidence for it mattering at household levels is thin, and I would not choose a fridge or a cupboard on that basis. Temperature, stability and light are the three that are actually established.

Storing wine without a wine fridge

Most people do not need one, and the advice that says otherwise is usually written by someone selling them. If your bottles are drunk within a year or two, all you need is the best cupboard you already own.

What you are looking for is the coolest, darkest, most temperature-stable spot in the house — and stability is the criterion that eliminates most candidates:

A common instinct is to use the kitchen fridge. That works for a few days and is right for anything you will open soon, but a fridge runs at about 4°C — colder than ideal — and its dry air is unkind to corks over months. When a wine fridge is genuinely worth it

Three situations make one a sensible purchase, and none of them is simply owning wine.

You have nowhere stable. A flat where every cupboard is warm, or a house that swings ten degrees between seasons. Here a cooler is buying you stability, which is the thing that actually matters.

You keep bottles for years. Wines built to age — classed-growth Bordeaux, Sauternes, vintage Port, fine Riesling — reward proper conditions because you are asking them to develop slowly over a decade or more.

You want service temperature on tap. A dual-zone unit lets you pour a white at drinking temperature without planning ahead. That is a convenience benefit rather than a preservation one, and it is a perfectly good reason.

If none of those apply, spend the money on wine. A steady cupboard at 16°C will look after a two-year-old bottle perfectly well.
