What Wine Goes With Trout?

Freshwater, delicate and much leaner than salmon. A lighter problem entirely.

Trout is a freshwater fish, leaner and more delicate than salmon despite the family resemblance. It has none of salmon’s oiliness and a much subtler flavour, which means it is easily overwhelmed — and that the wines people reach for with salmon are usually one step too big.

Delicate means restraint

The whole pairing problem here is not clashing but drowning. Trout has a clean, faintly sweet, almost nutty flavour and very little fat. Anything oaked, anything with real weight, and anything aromatic enough to dominate will simply erase it.

What it wants is precision: a wine with good acidity, low to moderate body, and aromatics that stay in the background. Riesling from a cool site is close to perfect, which is why the classic pairings for trout come from the Mosel and Alsace rather than anywhere warmer.

What to actually open

Mosel Riesling. Low in alcohol, high in acid, with a delicacy that matches the fish rather than covering it. Trocken if the trout is plain, Kabinett if there is anything sweet on the plate.

Chablis. Unoaked and mineral, and the safest choice with a butter or almond sauce — the acidity cuts the fat without adding weight.

An Alsace white, which is the regional answer: trout with almonds is an Alsatian dish, and dry Alsace Riesling or Pinot Blanc is what it is drunk with there.

Smoked, and truite au bleu

Smoked trout is a different pairing: much more intense, salty and smoky. That takes a wine with more presence — an off-dry Riesling, a Grüner Veltliner, or Champagne, whose bubbles handle the oiliness of the smoke.

Trout with almonds — amandine — adds nuttiness and browned butter, which suits a lightly oaked white or a fuller Alsace bottling.

Cooked whole over fire, the char argues away from oak and towards fruit and acidity. And if the trout comes with bacon, as it often does in Britain and America, the salt softens the wine and lets you go sharper than you otherwise would.
